Five on Friday

Aah, Friday… How I ♥ you!

1. I’ve been doing lots of fall-inspired baking lately. Last week I whipped up the best apple cobbler EVER using Fiji apples my girlie and I picked at a local orchard. And yesterday I made pumpkin fudge, my first attempt at legit candy using a candy thermometer. I think Jillian would be proud!

                   

2. I’m officially signed up for NaNo (my profile is HERE — let’s be writing buddies :)), and my story idea (read: PLOT — characters are easy!) is starting to take shape. Thank you, long morning runs! Next week I’m going to attend a meet-and-greet with locals who are also NaNo-ing. I’m very excited to meet some California-based writers, and to dive in to my new project. Yay for National Novel Writing Month!

3. We’ve been having a stretch of gorgeous weather here in Central California, and I am in heaven. I love sun and warmth and tan lines and afternoons at the beach. Last Sunday my family and I had one of those perfect Indian Summer days, one we spent kayaking and fishing and picnicking at a nearby lake. We capped it off with terrible-for-you pizza at a dive just off the highway. It was fantastic.

4. How to Plot a Novel in 27 Easy Steps… These videos by “Plot Whisperer” Martha Alderson are amazing. If you haven’t watched them, you should. Like, right now. Most are somewhere between five and ten minutes, and they’re like attending a free workshop on painless plotting right from the comfort of your couch. I took frantic notes and pondered my NaNo WiP while watching, and I learned SO MUCH. Thank you, Ghenet Merthil, for introducing me to the Plot Whisperer! (I’ve included the first video below, and the rest are on YouTube.)

5. Big things are happening here at the blog this Monday (as well as at the blogs of a few of my friends!). Be on the look-out for a post chock-full of information on something reading-related and awesome. (Don’t you love when people post enigmatic hints about wonderful things, then make you wait for the details? ;))

{My dad visited last week and we took him to visit Hearst Castle, the “ranch” once owned by William Randolph Hearst. The property and the house are gorgeous, and if you ever find yourself near San Simeon, CA, I definitely recommend checking it out. (Though, I don’t necessarily recommend driving down Highway 1, especially if you’re traveling with kiddos. My poor girlie had a bit of a carsickness episode about two miles from Hearst Castle, so that was fun to deal with. Oy.)}

{So, Dolly needed a bed. Rather than spend $150 on the American Girl version, my husband and father-in-law crafted her one from old banisters and crown molding, and I painted it. Then, I made Dolly linens from the somewhat garish peacock fabric my girlie picked out. All in all, it turned out pretty darn cute, and the final cost was a fraction of what American Girl was asking. Success!}

One-Word Wednesday

First, thank you all a million times over for your kind, supportive, and often humorous comments regarding Monday’s post. While I hate knowing that so many of you are also experiencing a case of the blahs (and for so many different reasons!), it is comforting to know that I’m not alone, and that I’ve got plenty of friends in my corner, rooting me on.

Tell me: What’s the last item you treated yourself to, just because?

Luau Cake

So, yesterday my girlie and I invented Luau Cake, a relatively healthy and incredibly yummy summer dessert. The original idea came from Pinterest (naturally), and a recipe from It’s On the Tip of My Tongue. Blogger Sarah Rolf used a box of sugar-free yellow cake mix, diet orange soda, and a Cool Whip Light “frosting” to create a cake that apparently tastes like an Orange Cream Soda. Yum, right?

I happened to have a dangerously ripe mango and some very soft strawberries hanging around, so I decided to expand on Sarah’s original recipe.

My girlie and I preheated our oven to 325 degrees and mixed one box of sugar-free yellow cake mix (ignore the suggested ingredients like eggs, oil, and water printed on the cake mix’s packaging–you don’t need them!) with twelve ounces (one can) of diet orange soda and one teaspoon of coconut extract.

We sprayed a bundt pan with Pam, then sprinkled coconut flakes, fresh diced mango, fresh diced strawberries, and pineapple bits (the kind that are canned in their natural juices) so that the combined fruit just covered the bottom of the pan. We poured the cake/orange soda/coconut extract mixture over the fruit.

We baked our Luau Cake at 325 degrees for approximately 50 minutes. Keep an eye on your cake. You want it to be spongy and moist, not overdone. A toothpick came out of our cake clean when it was finished baking. Let the cake cool completely before carefully inverting it on a plate or cake stand.

Look how pretty! We ate our Luau Cake with dollops of Cool Whip Light. A sweet and easy summer dessert!

Ahh, ice cream… One of my favorite foodie indulgences. I could eat it daily (some weeks I do!), but I try to stick to the healthy-ish Dreyer’s Slow Churned, No Sugar Added variety. The Butter Pecan tastes pretty darn amazing, especially with a few crumbled pretzels and some Smucker’s Sugar-Free Hot Fudge drizzled on top. What can I say? I like the extra add-ins almost as much as the ice cream itself. 🙂

Lately, I’ve had the urge to experiment with making my own ice cream, and I’ve hunted down a few recipes that look promising:

Banana Trifle

(Disclaimer: I’m revising/rewriting, therefore I think of pretty much nothing but the words on my pages and the next snack I’m going to shovel down my throat. Hence, this post.)

I fancy myself a relatively healthy eater, but–frankly–I’m a bit of a glutton when it comes to desserts. I can eat my weight in ice cream and I know no limits when it comes to rich, fudge-y chocolate cake. Unfortunately, those yummies aren’t exactly figure friendly, so I’m constantly hunting for and experimenting with low-calorie and/or low-sugar treats that I can consume guilt-free and without abandon.

I’ve had a taste for bananas lately (perhaps because of the Banana Nut Bread candle I’ve been burning twenty-four-seven), and the other day I had a very specific craving for banana pudding. I decided to make a trifle because they’re pretty and layered and full of scrumptiousness. I consulted Pinterest, my go-to place for all things delish, but I had a hard time finding a recipe that was both healthy and easy. So, I decided to create my own.

And, because it was just so darn yummy, I  wanted to share it with all of you!

***Banana Trifle***

Here’s what you’ll need for the nine (easy) layers:

  • LAYERS ONE AND FIVE – Angel food cake, cut into bite-size pieces (I bought a large cake from the Safeway bakery, but you can certainly bake your own).
  • LAYERS TWO AND SIX – Whip together 8 oz reduced-fat cream cheese (softened), one tub Fat-Free Cool Whip (thawed), 1/2 cup sugar or your favorite sugar substitute (I used Stevia).
  • LAYERS THREE AND SEVEN – Three or four bananas, thinly sliced.
  • LAYERS FOUR AND EIGHT – Whip together 3 cups cold non-fat milk, one large box of instant vanilla pudding, and one large box of instant banana cream pudding (I used the Jell-O Sugar-Free, Fat-Free option and my standing mixer).
  • LAYER NINE – One tub Fat-Free Cool Whip.

To assemble, layer in a large, clear bowl:
  1. Half of the diced angel food cake.
  2. Half of the cream cheese mixture.
  3. Banana slices.
  4. Half the vanilla/banana pudding mixture.
  5. Remaining angel food cake.
  6. Remaining cream cheese mixture.
  7. Banana slices.
  8. Remaining pudding mixture.
  9. Tub of thawed, Fat-Free Cool Whip (surrounded by a pretty ring of bananas).

A few notes:

  • My husband called me a “trifling ho” no less than three times while I assembled this delectable creation. (Hardee har har.)
  • I had the almost irresistible urge to drizzle both layers of angel food cake with banana rum, but since I knew I’d be sharing this dessert with my girlie, I thought better of it. Might try that one of these days though. 🙂
  • While surfing Pinterest for trifle recipes, I happened upon this one, which calls for Nutter Butters in place of angel food cake. Yum.
  • Feel free to experiment. I’ve seen versions of this recipe that included, among other things, chocolate ganache, Nilla Wafers, and strawberries. If you try a variation, please do let me know how it turns out!
  • EDIT – In an wonderful occurrence of serendipity, my friend Jaime blogged about trifles today too, but in reference to the Friends episode where Rachel majorly botches her recipe. “It’s a trifle. It’s got all of these layers. First there’s a layer of ladyfingers, then a layer of jam, then custard, which I made from scratch, then raspberries, more ladyfingers, then beef sautéed with peas and onions, then a little more custard, and then bananas, and then I just put some whipped cream on top!” Oh, how I ♥ Friends.

Tell me: If calories and clogged arteries weren’t an issue, what dessert would you eat indefinitely? (Remember the rich and fudge-y chocolate cake I mentioned above? That. With ice cream. And raspberry sauce.)

Monday Musings…

Ahh, the holidays. I feel like I’ve been shopping and wrapping and baking for eons! I’ve got so much crazy going on this week, it’s hard to keep it all straight in my head. Good news? It’s all fun, Christmas-y stuff. Bad news? It’s all majorly time consuming!  That said, I do have a few things to share with you today. Please excuse the random nature of this post. 🙂

1. Thanks so much to everyone from the Deja Vu Blogfest who stopped by this little blog over the last few days. Your comments on my (re)post were reassuring and validating and inspiring. The YA community rocks!

2. I made November Cakes! In case you’re in the dark about these tasty little treats, November Cakes are pastries invented by Maggie Stiefvater, beautifully described in The Scorpio Races (an aMaZiNg book, by the way). Maggie recently wrote and posted a recipe for these little rolls of heaven, and of course I had to test it out. Though they took about four (FOUR!) hours to make start to finish, the effort was certainly worth it…

Now, I’m not sure Maggie would approve, but I’m thinking I might’ve come up with a shortcut for November Cakes, in case you’re not down with spending four hours in the kitchen dealing the yeast and multiple risings. Why not buy already prepared refrigerated bread dough and start with that, picking up Maggie’s recipe after the first rising, and skipping the second rising all together? I admit, I haven’t actually tried this yet so I can’t vouch for whether these shortcut November Cakes are quite as delicious, but I’m definitely down to give it a go. Also, the next time I make November Cakes I’m going to roll candied pecans into them. Because… why not?

3. YA Highway has been rocking my world lately. It almost seems as if the bloggers there are tailoring their posts to me and the specific struggles I’m having with my writing. Take this post on Getting Your Characters “In” by Veronica Roth, or the one about Asking Why by Leila Austin. Seriously awesome. I highly recommend you check out these posts (and all the rest!) if you haven’t already.

4. The Class of 2011: YA Superlative Blogfest kicks off one week from tomorrow! There’s still plenty of time to prepare and schedule your posts before the real holiday madness begins. Have you signed up yet?

5. Dexter. Season finale. Last five seconds = Jaw drop. Holy Hell.

6. Remember last week when I mentioned my daughter’s preschool Christmas Program? Well, it was predictably adorable. Nothing like 25 four-year-olds screaming Jingle Bells at the top of their lungs. Not that I’m biased or anything, but there was one four-year-old who was especially delightful…
